  • 1 tablespoon meat masala
  • 1 teaspoon ground coriander
  • 1 tablespoon chopped fresh ginger
  • 1 tablespoon fresh chopped mixed herbs
  • 1/2 teaspoon chili powder
  • 1 tablespoon turmeric

Saute the onions in the oil. When limp and golden-brown, add all the spices from garlic to the sugar. Stir fry lightly to develop the flavour. Add the vegetables, lemon juice and reserved stock and simmer gently for about 15 minutes. Add meat and bring to the boil. Then turn off the heat and allow to mature overnight (in a non-reactive container). Reheat just before serving. Sprinkle with chopped fresh coriander leaves and serve with rice and sambals.
